GENERAL CHARACTERISTICS

With the addition of Oenotech DAP Combo, we can meet the nitrogen and thiamine needs of yeasts in strongly nutrient-deficient musts (YAN<80-100 mg/l N).

In cases of over-purified must, strong microbial contamination, or grape overripeness, the use of Oenotech DAP Combo ensures the nitrogen level necessary for the yeast to initiate fermentation without promoting the growth of already present bacteria.

Supplementing YAN is also recommended if only organic nutrients are used.

It can also be used during fermentation restart, especially if the must/wine has already been properly detoxified beforehand.

In cases of strongly nitrogen-deficient musts, it is advisable to distribute the total required amount of Oenotech DAP Combo in two steps, thus avoiding the onset of excessively vigorous fermentation, which leads to a rapid increase in alcohol and temperature, creating a significant stress source for the yeast.

Oenotech DAP Combo does not contain ammonium sulfate, making it suitable for the production of organic wines.

DOSAGE AND APPLICATION

Dissolve the product in a small amount of water or must, and distribute it evenly in the must to be fermented.
