GENERAL CHARACTERISTICS
Potassium bicarbonate is suitable for the fine acid reduction of must, new wine, and wine, as the acid-reduced must, new wine, and wine can be quickly racked from the formed crystals and thus quickly prepared.
DOSAGE AND APPLICATION
100 g of K-Bicarbo / 100 l of must, new wine, or wine theoretically reacts with 0.75 g/l of tartaric acid, but in practice, this ratio can be close to 0.9-1 g/l. The reaction is not precise, as wine is a complex medium influenced by K, Ca, tartaric acid content, pH, etc. Laboratory pre-tests are recommended to determine the exact dose! Dissolve K-Bicarbo in a small amount of wine or water and gradually add it to the tank while stirring vigorously. Care must be taken to select a sufficiently large acid reduction tank, as CO2 is released during the acid reduction process.
