USAGE INSTRUCTIONS:
OPTIMAL DOSING TIME:
- White wine: From the start of fermentation to achieve a well-integrated oak profile and preserve the fruity character
- Red wine: At the start of alcoholic fermentation to maximize respect for the fruit profile, or before malolactic fermentation for a more complex aromatic profile. In both cases, maximum integration of the tannin structure can be achieved.
On white grape varieties, such as Sauvignon Blanc or Verdejo, aiming for a balanced and optimal ripeness, complex oak profile, freshness, volume, long aftertaste, and minerality: 2 g/l, 30% light toasting, 50% medium toasting, 20% medium+ toasting at the start of alcoholic fermentation.
In a ripe and concentrated Merlot-Cabernet blend, where the goal is a complex and balanced oak profile, body, intensity, and long aftertaste: 4 g/l, 20% light toasting, 50% medium toasting, 30% medium+ toasting at the start of malolactic fermentation or at the beginning of aging.
RECOMMENDED AGING TEMPERATURE:
Minimum 15°C, with strict control of microbiological conditions.
APPLICATION:
It is recommended to secure the cotton bags at half the filling level of the container using food-grade ties.
RECOMMENDED CONTACT TIME:
At least 3 months, verified by continuous tasting.
