The ZYM NATURE should be added to the must and the juice collection tank — for white and rosé musts, as well as red wines. It can be dosed directly at the crusher, into the transport containers before pressing, or during fermentation on the skins of red grapes.
It promotes the clarification of free-flowing must and the first pressing fractions, and is particularly suitable for the depectinization of white and rosé musts. The treatment improves the operations of subsequent clarification, centrifugation, and flotation. For red, white, and rosé grapes, it optimizes fermentation on the skins, increasing the yield of free-flowing and pressed
must.
If you plan to use bentonite, the enzymatic reaction must be completed before adding the bentonite.
Dosing:
Clarification of white/rosé must or red wine 2-3 g/hl 1-2 hours at 20 °C or 2-3 hours at 5-10 °C
Grape must — clarification 2-4 g/hl 2-8 hours at 15-20 °C
Grape must — centrifugation 2-5 g/hl 1-2 hours at 15-20 °C
Heat-treated red grapes 2-4 g/hl to be dosed after thermovinification, below 56-58 °C
COMPOSITION
ZYM NATURE is stabilized with glycerin (E422).
NON-GMO, VEGAN AND VEGETARIAN FRIENDLY
The product and the component enzymes are genetically unmodified. The enzyme proteins are produced through the fermentation of traditional microorganisms, which are then removed and are not present in the final product. Only non-genetically modified (non-GMO) sourced agricultural raw materials are used in the fermentation process and the final composition. The product and its ingredients are not of animal origin, thus suitable for vegan and vegetarian diets.
PACKAGING AND STORAGE
ZYM NATURE is available in 25 kg and 1 kg packaging.
Store in its original, sealed packaging, refrigerated (4–8 °C) to preserve enzyme activity. Under optimal conditions, the product can be stored for 24 months from the date of manufacture.
